  • 1/4 cup Yogurt
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Ginger Green Chili Paste

  • 1/2 tablespoon Lemon Juice

  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • 4.50 Y Leaves
  • 1 Green Chilies, Slit

Cooking Directions

  • STEP 1.In a bowl, mix gram flour, yogurt, turmeric powder, ginger-green chili paste, sugar, lemon juice, and salt.
  • STEP 2.Add water gradually to make a smooth batter. Let it rest for 15-20 minutes.
  • STEP 3.Grease a steamer plate and pour the batter into it. Steam for 15-20 minutes or until cooked.
  • STEP 4.Heat oil in a pan and add mustard seeds, cumin seeds, curry leaves, and green chilies for tempering.
  • STEP 5.Pour the tempering over the steamed khaman and garnish with coriander leaves.
  • STEP 6.Cut into squares and serve with chutney or tea.

  • Make sure the batter is smooth and lump-free for a fluffy texture.
  • You can adjust the amount of sugar and lemon juice according to your taste preference.
  • To check if the khaman is cooked, insert a toothpick or knife into it. It should come out clean.
