This is the absolutely awesome vegetarian version of the traditional Mutton Galouti kebab! The kebabs are aromatic & melt in mouth from the Awadhi Cuisine! Boiled rajma is mixed with a yam and plethora of spices and panfried to get the perfect kebabs, so apt for a rainy day along with mini lachha parathas, chutney and onions! #monsoonrecipes

Ingredients for Rajma galouti kebabs Recipe

  • 0.38 cups Well boiled rajma
  • 0.13 cup Elephant foot yam cubed and bolied
  • 0.38 tbsp Ghee
  • 2.50 Pieces fried cashews
  • to taste Salt
  • 1/4 tsp Ginger-garlic paste
  • 1/2 Pieces reen chillies
  • 0.13 tsp deggi mirch
  • 1/2 tsp fried onion
  • 1/4 tbsp roasted gram flour
  • 1 Tbsp hee/oil for frying
  • 1/4 tsp Stone Flower (optional)
  • 3/4 g each of green & black Cardamom
  • 1/2 tsp Black peppercorns
  • 1/2 tsp Coriander seeds
  • 1/4 Inch Cinnamon stick
  • 1/2 Pieces Mace/ javitri
  • 1/4 tsp Black Cumin Seeds/Shahjeera
  • 0.13 Pieces small nutmeg
  • 1/2 Pieces hot Coals
  • 3/4 Pieces Cloves
  • 1/4 tsp Ghee

Directions: Rajma Galouti Kebabs Recipe

  • STEP 1.For kebab masala: Dry roast all the dry masala ingredients til fragrant, let cool & grind to a fine powder.
  • STEP 2.For Kebab Paste: In a bowl, add boiled rajma & yam, fried cashews, salt, ginger-garlic paste, red chilli powder & mix.
  • STEP 3.Grind it into a smooth paste in an mixer (in batches). Remove in a bowl & add fried onions, kebab masala, salt, gr chilli, gram flour & mix with hand till well combined.
  • STEP 4.Smoke it - Take coal, burn it til red hot, place in a metal bowl ; add cloves, ghee & keep in the kebab mixture bowl; cover it with lid for 5-6 minutes. Then remove & mix the mixture once & shape round kebabs of equal portion; keep aside.
  • STEP 5.Heat a non-stick pan, add ghee & place kebabs after dry dusting with besan and pan fry until golden brown & crisp from both sides.
  • STEP 6.Remove and serve warm with lachha parantha, lachha pyaz & chutney!
