  • 1/5 cup ragi flour
  • As required ½ cup powdered jaggery
  • As required ¼ cup ghee
  • As required ¼ cup chopped Almonds
  • 0.40 tbsp chopped cashews
  • 0.40 tbsp grated dry coconut
  • As required ½ tsp cardamom powder
  • 0.40 tbsp warm milk
  • As required or as needed
  • 1/5 tbsp sesame seeds
  • As required pinch of salt

  • STEP 1.In a heavy-bottomed pan, dry roast the ragi flour on low flame for about 8 to 10 minutes, mixing it constantly until it smells nutty and the raw aroma vanishes.
  • STEP 2.To this, now add grated dry coconut and sesame seeds. Cook for another 2 minutes, keeping the flame low so that the coconut does not get too brown.
  • STEP 3.In a separate pan, heat the ghee and lightly fry the chopped almonds and cashews until they turn aromatic. Remove them from the pan and let them cool down a bit.
  • STEP 4.Transfer the roasted ragi mixture to a deep bowl. Add powdered jaggery, cardamom powder, a pinch of salt and the fried nuts and then mix everything thoroughly.
  • STEP 5.Slowly add warm ghee and mix until the mixture begins to hold together when pressed. Add a little warm milk only if required to bind it.
  • STEP 6.Grease your palms, take small portions of the mixture while it is still warm and then roll them firmly between your palms to make smooth, evenly shaped ladoos.
  • STEP 7.Let the ladoos cool down thoroughly before storing them in an airtight box. If using milk for binding, keep it refrigerated and finish it within a few days.
