The much famed Ragda Patties is a part of Maharashtra's delicious street food that one should never leave out on. Ragda pattice is a dish of mashed potato patties and pea sauce, and is part of the street food culture in the Indian states of Maharashtra and Gujarat. It is similar to chhole tikki, more popular in North India. This dish is a popular street food offering, and also served at restaurants that offer Indian fast food.

Ingredients for Ragda Pattice Recipe

  • As required For Patties
  • 3 Potatoes medium
  • As required Salt
  • 1 teaspoon Garlic Green chilli paste
  • 3 White sliced bread
  • As required Oil For Frying
  • As required For Ragda
  • 2 cup White Peas
  • As required Water
  • As required For Ragda Patties
  • 4 tablespoon Green chutney
  • 4 tablespoon Sweet and Sour chutney
  • 1/4 teaspoon Degi red chilli powder
  • 1/2 cup Onion, chopped
  • 1/4 cup Tomato, chopped
  • 1 fresh Green chilli, chopped
  • 1/2 teaspoon Dry garlic chutney
  • 1 tablespoon Coriander leaves, chopped
  • 2 tablespoon Sev
  • 1/4 teaspoon Roasted cumin powder
  • 1/4 teaspoon Chaat masala
  • 1/4 cup Pomegranate pearls
  • As required Lemon wedges

Directions: Ragda Pattice Recipe

step 1

  • STEP 1.For Patties- In a bowl add grated potatoes, salt, garlic-green chilli paste, white sliced bread and mix everything properly and keep aside for 5-10 minutes.

  • STEP 1.After resting, make some round tikki from the mixture and fry on both sides until golden brown. Remove and keep aside for further use.

step 3

  • STEP 1.In a pan add water and boiled white peas ( with turmeric powder & salt) and bring it to a boil (don't add too much water).

step 4

  • STEP 1.For assembling ragda patties- On a serving plate add warm ragda then add some green chutney, sweet & sour chutney and then place the patties on it.

step 5

  • STEP 1.Now sprinkle some degi red chilli powder, chopped onion, tomatoes, green chilli, and some dry garlic chutney.

step 6

  • STEP 1.Then garnish it with some coriander leaves, sev, roasted cumin powder, chaat masala, pomegranate pearls and lemon wedges.
