Purple beans are a gorgeous variation of green beans that are disguised in a violet hued skin. This recipe is rich in dietary fibre and vitamin A along with being easy to prepare. Ingredients for Purple Green Beans Recipe

  • 1.50 cup Green beans
  • 1/2 tablespoon Olive oil
  • 0.08 cup Water
  • 0.13 teaspoon Salt
  • 0.06 teaspoon Fresh ground black pepper

Cooking Directions

  • Wash your beans then snap the ends off of all the beans. You are taking off about 1/4-1/2 inch.
  • Heat the olive oil and water a heavy bottom, large pan or dutch oven over medium heat. When the oil is hot, add the green beans. Stir to coat.
  • Let them sit for 5 minutes or so. You should start to hear them pop.
  • When you hear some popping, stir, then cover the pot and let them cook for 5-7 more minutes.
  • Uncover, check doneness (the longer they cook, the less crisp they are). Sprinkle it with salt and pepper. Serve warm.

Cooking Tips

  • Trim the end of the beans using a sharp knife before cooking.
  • If you want the beans to be crispy do not cook for a long time.

  • Reheat before serving.
  • Can be stored in the refrigerator for up to 2 days.
