Ingredients for Puri For Pani Puri Recipe

  • 1 cup Sooji
  • 2 tablespoon Maida
  • 1/2 teaspoon Salt
  • 1 tablespoon Oil
  • 1/4 cup Water warm water
  • As required Oil for deep frying

Directions: Puri For Pani Puri Recipe

step 1

  • STEP 1.Into a large mixing bowl add 1 cup sooji/ rava and ¼ cup warm water. Mix together well till the sooji has absorbed all the water. The mixture will resemble a wet crumb texture.

  • STEP 1.To this add salt to taste and 1 tbsp maida to absorb the excess moisture and provide gluten for the dough. Knead well to ensure that the ingredients come together.

  • STEP 1.Knead for 7 to 10 minutes to develop the gluten required to make it crisp and puff up when fried. Add 1 tbsp oil and continue to knead for 3 to 4 minutes.

  • STEP 1.After 30 minutes, divide the dough into 3 large portions. Take 1 portion to roll out and keep the other 2 aside covered.

  • STEP 1.Grease a flat surface and roll out 1 portion at a time. Roll the dough out into a very thin sheet so that the puris will be crisp.

  • STEP 1.Using a round cookie cutter, cut out the puris. And keep them aside. Roll out each puri even thinner if required.

  • STEP 1.In a kadai, preheat oil for about 15 minutes on low heat. When hot, slide in one puri at a time into the hot oil. Fry on low to medium heat till the puris are crisp and golden brown on both sides. They should also puff up well. Remove from the oil and drain on a kitchen paper towel.
