Directions: Punjabi Missi Roti Recipe: How To Make This Spiced Besan Flatbread

  • STEP 1.In a large mixing bowl, add wheat flour, gram flour, chopped onion, green chillies, coriander, ginger, cumin seeds, ajwain, turmeric, red chilli powder, coriander powder, kasuri methi and salt.
  • STEP 2.Add 1 tbsp oil and mix everything nicely. Slowly add water and then knead to make a soft, stretchy dough.
  • STEP 3.Cover and let the dough rest for about 10 to 15 minutes. This will let the flour soak up the moisture and make the dough easy to roll.
  • STEP 4.Divide the dough into equal portions and roll each one of them into a smooth ball. Dust it lightly with flour and then roll into medium-thick discs. Do not roll them very thin.
  • STEP 5.Over a medium-high flame, heat the tawa and place the rolled roti on it. Cook until the bubbles appear on the surface, then flip and cook from the other side as well.
  • STEP 6.Brush with a little ghee and then cook again from both sides until golden brown spots appear and the edges get perfectly cooked through. Press it gently with a spatula so the roti gets cooked evenly.
  • STEP 7.Remove from the tawa and then brush with a little more ghee if preferred. Serve hot with dal, seasonal sabzi for a hearty meal.
