Chicken Bhuna Masala is North Indian preparation of Chicken cooked in a gravy mixed with roasted whole spices (not powdered). It is a rugged spicy dish usually prepared with scanty gravy with roasted whole spices.

Ingredients for Punjabi bhuna chicken Recipe

  • 166.67 Gram Chicken
  • 0.67 Pieces Onions
  • 1 Pieces Tomatoes
  • 0.33 Tsp Ginger paste
  • 0.33 Tbsp garlic paste
  • 1 Pieces Green Chilies
  • Handful Coriander leaves
  • 0.33 Pieces Bay leaves
  • 1.33 Pieces green cardamoms
  • 2 Pieces Cloves
  • 0.33 Pieces Cinnamon stick
  • 0.33 Tsp Cumin seeds
  • 0.33 Tsp Coriander seeds
  • 2.67 Pieces Black Peppercorns
  • 1 Pieces Dried Red Chilies
  • 0.33 Tsp Red Chili powder
  • 0.33 Tsp Turmeric powder
  • 0.33 Tbsp Coriander powder
  • 0.33 Tsps Cumin powder
  • 0.33 Tsp Garam Masala powder
  • 1.33 Tbsp Curd
  • As Required Water
  • As Required Mustard oil
  • As Required Salt

Directions: Punjabi Bhuna Chicken Recipe

  • STEP 1.Place the Chicken pieces in a bowl, add 1/3 cup Curd, 1 teaspoon Red Chili powder, ½ teaspoon Turmeric powder, 1 teaspoon Cumin powder, 1 tablespoon ginger-Garlic paste, Salt as per taste and then marinate Chicken with all the spices. Set it aside for an hour
  • STEP 2.Place a Kadai (wok) and turn on the gas. Add Mustard oil & let it heat up. Once the oil turns hot, add 2 Bay leaves.
  • STEP 3.Add the chopped Onions and sauté for 8 minutes. Then add the roasted spices & mix well.
  • STEP 4.Add Ginger garlic paste, mix well till the mixture turns light brown.
  • STEP 5.Now, add the Tomato paste and some salt and mix together.
  • STEP 6.Cover the Kadai with a lid and cook for 10 minutes. After 10 minutes, open the lid and add ½ teaspoon Red Chili powder and Mix well.
  • STEP 7.Now add the marinated Chicken and coat the Chicken pieces with all the spices. Cover with a lid again and cook for 10 more minutes.
  • STEP 8.After 10 minutes, flip the Chicken pieces. Then add water for gravy (we used 1/3 cup) and cover the lid to cook for 10 more minutes.
  • STEP 9.Then add 1 teaspoon Garam Masala powder & add the slit Green Chilies. Mix well & let it cook for 5 minutes.
  • STEP 10.After 5 minutes add chopped Coriander leaves and mix a little. Chicken Bhuna Masala should now be ready.
