  • As required For the potatoes
  • 500 gram potatoes can be regular or new potatoes
  • As required olive oil extra virgin
  • NaN As required salt and pepper
  • As required For the octopus
  • 1.50 kilogram clean octopus
  • As required vegetable oil
  • As required For the olive sauce
  • 1 No.s egg
  • 1/2 teaspoon DIjon mustard
  • 1 No.s garlic clove grated or puréed
  • 300 milliliter vegetable oil
  • As required A few drops lime or lemon juice
  • As required salt and pepper
  • 100 gram purple Peruvian olives
  • 1 tablespoon olive oil

  • STEP 1.For potatoes

  • STEP 1.cut the potatoes in half and add them in a boil with a dash of olive oil and season them with some salt and pepper.

  • STEP 1. cook them in a preheated oven at 180 degree c for around 30-40 minutes.

  • STEP 1.For octopus

  • STEP 1. freeze the octopus for 24-48 hours.

  • STEP 1. boil some water in a pan and dip the octopus slowly in it and then submerge it fully.

  • STEP 1. cover the pot with a lid and let it cook it.

  • STEP 1.once cooked, drain the water, take out the tentacles and discard the body.

  • STEP 1.For olive sauce

  • STEP 1. blend olives with some olive oil.

  • STEP 1. add egg, mustard, garlic, dijon, salt and pepper in a bowl and whisk it well.

  • STEP 1. gradually add olive oil till you reach the desired consistency.

  • STEP 1. top it with some lime juice and you are good to go.
