Directions: Prawn Ravioli With Mint & Pea Puree Recipe

Cooking Directions

  • STEP 1.To make the prawn filling, blend prawns, garlic, herbs, and seasoning in a food processor until smooth.
  • STEP 2.Place a spoonful of the prawn filling onto a wonton wrapper, brush the edges with water, and fold to form a ravioli shape.
  • STEP 3.Boil the ravioli in salted water for a few minutes until they float to the surface, then remove and set aside.
  • STEP 4.For the pea puree, cook peas in boiling water until tender, then drain and blend with mint leaves, lemon juice, and seasoning.
  • STEP 5.To serve, spoon the pea puree onto a plate, place the cooked ravioli on top, and garnish with fresh mint leaves.
