  • STEP 1.Boil the potatoes until they are soft and tender. Peel and mash them.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped onions and saut茅 until they turn golden brown. Then, add chopped tomatoes and cook until they become soft.
  • STEP 4.Add turmeric powder, red chili powder, and salt. Mix well.
  • STEP 5.Add the mashed potatoes and mix everything together. Cook for a few minutes until the flavors blend well.
  • STEP 6.Garnish with coriander leaves and serve hot with rice or roti.
