Classic dauphinoise potatoes baked in a creamy garlic sauce and finished with Gruyere cheese. dauphinois is a French dish of sliced potatoes baked in milk or cream, using the gratin technique, from the Dauphiné region in south-eastern France. There are many variants of the name of the dish, including pommes de terre dauphinoise, potatoes à la dauphinoise and gratin de pommes à la dauphinoise.

Ingredients for Potato Dauphinoise Recipe

  • 2 cup double cream 480ml
  • 2 cup full fat milk 480ml
  • 3 garlic cloves peeled and lightly crushed
  • 2.75 pound King Edward or Maris Piper potatoes – use medium sized potatoes 1 0.25 kg
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • pinch Nutmeg
  • 1/4 teaspoon White Pepper
  • 1.50 cup grated gruyere cheese 150g

Directions: Potato Dauphinoise Recipe

step 1

  • STEP 1.Preheat the oven to 200°c, fan 180°c, gas 6.

  • STEP 2.Pour the milk and cream into a large saucepan.

step 3

  • STEP 3.Add the garlic, thyme and bay leaves, and bring to the boil.

step 4

  • STEP 4.Remove from the heat and leave to infuse for 5 minutes.

  • STEP 5.Thinly slice the potatoes on a mandolin or with a knife.

  • STEP 6.Remove the bay leaves from the milk, then add the onions and potatoes.

  • STEP 7.Return to the heat, bring to the boil and simmer for 3-5 minutes, stirring occasionally to prevent them sticking to each other.

  • STEP 8.When the potatoes are just tender, spoon into a buttered 2-litre ovenproof dish, layering the potatoes as you fill the dish.

  • STEP 9.Scatter the cheese on top, dot with the butter and sprinkle with the nutmeg.

  • STEP 10.Bake for 40 minutes, until golden brown on top and bubbling.
