How to Make Pork Curry With Mango Salsa Recipe

Start by chopping the 2 stick lemongrass, 2-3 red chili, 2-inch fresh ginger, 5-6 garlic clove, 1 tender mango, and 6-7 mint leaves

Then add the ground cumin powder, coriander, salt to taste, and black pepper. Put all the ingredients in a haman datshi and make a rough paste. Lastly, add 2 tbsp olive oil and mix it.

Wash and dice the pork neck into fine pieces and finely chop the onions.

Take a frying pan to pour 4-5 tbsp olive oil and heat the oil at medium flame. Add the pork neck pieces and cook them evenly from all sides. Take them out on a plate.

On the same pan add the chopped onions and fry them till golden. Add the mango salsa and saute it well. Then add the pork neck pieces and mix it well with the salsa.

Pour ½ cup coconut, ½ cup chicken broth, 1 tbsp palm sugar, 4-5 lime leaves, tbsp soya sauce, and fish sauce as required. Mix all of them well. Cover the lid and let it cook for another 45 minutes-1 hr at low flame.
