Cooking Directions

  • STEP 1.Boil and peel the potatoes. Roughly mash them and set aside.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions and sauté until golden brown.
  • STEP 4.Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft.
  • STEP 5.Add the mashed potatoes and mix well. Cook for a few minutes.
  • STEP 6.Garnish with chopped coriander leaves and serve hot with pooris.

Cooking Tips

  • You can add green peas or other vegetables to the bhaji for variation.
  • Make sure to roll the pooris evenly and fry them in hot oil for a crispy texture.
