  • STEP 1.In a mixing bowl, combine wheat flour, salt, and water to make a soft dough.
  • STEP 2.Divide the dough into small balls and roll them into round discs.
  • STEP 3.Heat oil in a deep pan and fry the pooris until they puff up and turn golden brown.
  • STEP 4.In a separate pan, heat oil and sauté onions until golden brown.
  • STEP 5.Add tomatoes, ginger-garlic paste, and spices. Cook until tomatoes are soft.
  • STEP 6.Add boiled and mashed potatoes, salt, and water. Simmer until the curry thickens.
  • STEP 7.Garnish with coriander leaves and serve hot with pooris.
