  • 1/20 cup Lime Juice
  • 0.40 tablespoon Achiote Paste

Cooking Directions

  • STEP 1.In a blender, combine orange juice, lime juice, achiote paste, garlic, cumin, oregano, salt, and pepper to make the marinade.
  • STEP 2.Place the chicken pieces in a large bowl and pour the marinade over them. Make sure the chicken is well coated. Cover the bowl and refrigerate for at least 4 hours or overnight.
  • STEP 3.Preheat the oven to 325°F (165°C).
  • STEP 4.Remove the chicken from the marinade and place it in a baking dish. Pour the marinade over the chicken.
  • STEP 5.Cover the baking dish with aluminum foil and bake for about 2 hours, or until the chicken is cooked through and tender.
