Pollo is a Mexican word for chicken, while Cilantro is a herb that is also known as coriander(Britain) and dhaniya (India). Chicken is prepared in myriad ways in Mexico for occasions big or small. The Mexican cuisine by and large is an amalgamation of the cuisine emerging from modern-day Mexico and its different regions, but its roots can be traced to the ancient Meso-American style of cooking and eating. There are several regional cuisines in Mexico too, and there is certainly more to Mexican cuisine than the saucy tacos and burritos. Pollo Al Cilantro is a delicious Mexican dish in which chicken is first marinated in garlic, oregano, salt, pepper and lime juice. This chicken is then seared on the grill until it is soft. So the hero of the dish is just chicken, and it does not require a whole lot of veggies and sauces and condiments to come together. You can simply pair it with rice for a mild and comforting meal.

  • 2 garlic cloves finely minced
  • 1/2 teaspoon Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon pepper
  • 1 bunch cilantro chopped
  • 1/2 cup Lime Juice
  • 1/2 cup olive oil
  • 3 pound chicken boneless, thighs

  • STEP 1.In a bowl, add garlic, oregano,salt, pepper, cilantro, and lime juice
  • STEP 1.Mix everything well
  • STEP 2.Slowly drizzle some olive oil.

Cooking Method

  • STEP 1.Coat the chicken with marinade you just prepared.
  • STEP 2.Make sure the chicken is nicely coated. Cover the chicken with a lid and let it marinate for at least one hour.
  • STEP 3.Add oil to the grill and let it heat.
  • STEP 4.Sear the chicken for 4-5 minutes on each side.

Storage And Serving Method

  • STEP 1.Serve hot with rice.
