Ingredients for Pollo Adobado Recipe

  • As required Guajillo Chiles
  • 2 Ancho Chiles
  • 5 garlic cloves
  • 1/4 onion roasted
  • 1 chile chipotle
  • 4 bay leaves
  • 1 teaspoon black pepper, ground
  • 1/4 teaspoon whole oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon Ground Cinnamon
  • 5 whole cloves
  • 1/4 cup apple cider vinegar
  • 1/2 cup Water
  • 1/4 cup Pineapple juice
  • 2 tablespoon achiote paste
  • 1 tablespoon Salt
  • 1 whole chicken

Directions: Pollo Adobado Recipe

step 1

  • STEP 1.Boil water in a pan and turn off the heat

step 2

  • STEP 1.Add the guajillo chilies and ancho chilies. Cover and rest for 5 mins.

  • STEP 1.Char onion and garlic. Blend the charred onion and garlic,chipotle, bay leaves, pepper, oregano, cumin, cinnamon, cloves, apple cider vinegar, water, achiote paste, salt, pineapple juice, and boiled chile in a blender

step 4

  • STEP 1.Chop and wash the chicken

step 5

  • STEP 1.Coat the chicken with the sauce and cover. And refrigerate for overnight.

  • STEP 1.Heat a grill to 375 degrees F. Add the chicken and grill for 15mins each side

step 7

  • STEP 1.Apply sauce again and grill for 15mins
