This quick & sweet pitha recipe is a stunning example of authentic Assamese cooking. The sweet crêpes are made with rice flour, before being filled with a combination of spiced coconut and date molasses which are all used in most of the popular assamese delicacies.

Ingredients for Pitha Recipe

  • 2 cup Rice
  • 2 tablespoon Jaggery
  • 1 tablespoon Fennel seeds
  • As required Water for dough

Directions: Pitha Recipe

step 1

  • STEP 1.1. Soak 2 cups of rice in water for 2-3 hours. Drain all the excess water and spread the rice on a clean cotton cloth.

  • STEP 2.2. Grind the rice in a mixer by repeating the above process. Strain the rice as well.

step 3

  • STEP 3.Sticky rice flour is ready.

  • STEP 4.3. Add a little water to jaggery and keep stirring till the jaggery dissolves completely.

step 5

  • STEP 5.4. Add fennel seeds to the flour. Now add the jaggery mixture to the rice flour and form a wet dough. Dough should not be hard, it has to be loose and wet.

step 6

  • STEP 6.5. Make small balls and flatten them into thick rounds.

step 7

  • STEP 7.1 in a pan pour mustard oil, heat it and fry the pitha on medium flame. Fry on both sides equally.  keep checking in between.  the texture should be crispy from outside.

  • STEP 8.Ghila pitha are ready.
