STEP 1.Preheat your oven to 175°C. Grease a mini muffin tin or use mini muffin cup liners. In a small saucepan, melt the 1/4 cup of butter over low heat. Once melted, add the brown sugar and stir until it's well combined. Remove from heat.
STEP 2.Spoon a small amount of the brown sugar and butter mixture into the bottom of each mini muffin cup, creating a base for the pineapple topping.
STEP 3.Place a small piece of pineapple on top of the brown sugar mixture in each cup. Add a maraschino cherry in the center of each pineapple slice.
STEP 4.In a medium bowl, whisk together the flour, baking powder, and salt. In a separate bowl, using an electric mixer or by hand, cream together the softened butter and granulated sugar until it's light and fluffy. Add the egg and vanilla extract to the butter and sugar mixture and beat until well combined.
STEP 5.Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
STEP 6.Carefully spoon the cake batter over the pineapple and cherry in each mini muffin cup, filling them about 2/3 full. Bake in the preheated oven for 15-18 minutes or until the tops are golden brown and a toothpick inserted into the center of a bite comes out clean.
STEP 7.Allow the Pineapple Upside-Down Bites to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
