Pineapple Rice Recipe

Ingredients for Pineapple Rice Recipe

  • 270 gram Glutinous rice
  • 270 milliliter Water
  • 1 Pineapple medium size Nos
  • 1 cup Pineapple juice
  • 0.33 cup Berry Mix
  • 3-5 As required Sugar tbsp

Directions: Pineapple Rice Recipe

step 1

  • STEP 1.Wash 270 gm glutinous rice by rubbing the rice in the water and discarding the cloudy water. Do this several times till the water runs clear.

  • STEP 2.When the rice is clean, soak it in 270 ml clean water for 2 hours.

step 3

  • STEP 3.Cut the pineapple open on one side and using a sharp knife cut out the flesh in small cubes. Scoop it out to make a pineapple bowl.

  • STEP 4.1 place ⅔ of the total pineapple flesh in a blender and blend till smooth. Retain ⅓ of pineapple flesh for later use.

  • STEP 5.2 pass the blended pineapple through a sieve to separate the juice from the fibre. Collect 1 cup of juice by pressing the blended pineapple in the sieve.

  • STEP 6.3 add 3 to 4 tsp sugar or as per taste depending on how tart the pineapple is. Stir to dissolve. Set it aside.

  • STEP 7.4 after 2 hours, drain off the water from 270 gm soaking rice. Transfer the rice to a saucepan and add equal amounts of water.

  • STEP 8.5 turn the heat to high, cover the pot and bring it to a boil.

  • STEP 9.6 then turn the heat to low and cook the rice for 10 to 12 minutes till all the water is absorbed.

  • STEP 10.7 transfer the rice to a large mixing bowl and add 1 cup of pineapple juice, the reserved pineapple pieces, ⅓ cup raisin and berry mix and salt to taste.

  • STEP 11.8 stir til all the ingredients are well combined. Taste and adjust the sweetness by adding sugar if required.

  • STEP 12.9 spoon the pineapple rice dessert in the pineapple bowl and garnish with pieces of pineapple and berries. Cover it with the cut flap/ lid of pineapple and insert toothpicks to hold it in place.

  • STEP 13.10 place the filled pineapple in a steamer and steam on high heat for 25 minutes. This helps to bind the flavours and makes the rice stickier and softer.

step 14

  • STEP 14.11 take it out of the steamer, remove the toothpicks and the pineapple ‘lid’ and serve.
