A sweet and tartness enriched dish prepared from pineapple and prawns. Pineapple prawn curry or 'udang masak lemak nanas' originates from the Peranakan cuisine. The combined flavours of sweetness and tartness from the pineapple infused with the curry is a delight to savour. This prawn dish is common in Malaysia and is a hit with the locals. A creamy gravy with a great amount of coconut milk is simmered along with whole bunch of fresh spices. The juicy pineapple cubes add sweetness and tanginess to the curry.

Ingredients for Pineapple Prawn Curry Recipe

  • 5 gram dried shrimp paste
  • 10 Nos fresh chilli peppers
  • 5 Nos shallots
  • 3 Nos garlic cloves
  • 15 gram Galangal
  • 1 tablespoon turmeric powder
  • 4 stalks lemongrass
  • 2 Nos candlenuts
  • 150 milliliter Oil
  • 200 milliliter coconut milk
  • 250 milliliter Water
  • 150 gram pineapple cubes
  • 200 gram prawns
  • 1/2 tablespoon Sugar
  • 1 teaspoon tamarind paste
  • 3 Nos kaffir lime leaves

Directions: Pineapple Prawn Curry Recipe

step 1

  • STEP 1.Dry roast shrimp paste until fragrant. Blend shrimp paste, chillies, shallots, garlic, galangal, turmeric, lemongrass and candle nut. Add oil in a pan and heat it. Add all the ground ingredients and saute.

step 2

  • STEP 1.Remove the excess oil, add coconut milk, add some water(if needed) add pineapple and allow it to cook for 2-5 mins. Now add prawns, tamarind paste and sugar. After prawns are cooked, turn off the stove and add kaffir lime leaves. Mix thoroughly and serve.
