This is a beautiful vegetarian biryani without the traditional touch of “dum” which deviates from the main procedure! i have also used powdered spices rather than whole as this ensures minimal wastage! this biryani can be ideally baked in the oven or put to cook over a tawa and it tastes absolutely delicious! this recipe is taken from nita mehta’s recipes and i have added a few of my twists to it! this is one of my best recipes till date and it is universally appreciated by my family and friends as well.

  • 0.33 teaspoon Salt
  • 1/25 teaspoon turmeric powder
  • As required The spice powders
  • 0.17 teaspoon clove Powder
  • 0.17 teaspoon cardamom Powder
  • 0.17 teaspoon cinnamon Powder
  • 0.08 teaspoon nutmeg Powder
  • As required The tomato paste
  • 0.83 fresh Tomatoes pureed
  • 1/2 tablespoon Oil
  • 0.17 tablespoon red chilli powder
  • 0.17 tablespoon ginger garlic paste
  • 0.17 bay leaf
  • 0.08 cup green capsicum, chopped
  • 0.08 cup Green Peas
  • 0.33 teaspoon Salt
  • 0.17 Onion, finely chopped
  • 0.17 teaspoon cumin Powder
  • 0.17 teaspoon pepper powder
  • 0.08 cup cream
  • As required For the layering ingredients
  • 0.17 cup sliced Onions, fried till golden brown
  • 0.08 cup thick yogurt
  • 0.83-1 tablespoon saffron strands dissolved in 2 warm milk
  • 0.67-0.83 drops kewra essence
  • 0.17 cup mixed Coriander, mint and Sliced green chillies, finely chopped
