A odia style tomato rice with lots of spices.

Heat the vessel and add 2tbsp oil
Add 1tbsp minced garlic and 1 diced onion
Add the tomatoes and cook for 3mins
Add 2 cups of rice and the chicken stock water
Add salt to taste and 1tsp red chili powder for seasoning
Cook for 8 mins until the rice is fully cooked , mix well
Garnish with mint leaves and serve hot
