About Picarones Recipe:

A pumpkin-cinnamon dessert sweetened with flovoured sugar syrup. These Peruvian doughnuts are a typical peruvian treat and are as good as American doughnuts but are much easier to make. The principle ingredients are squash and sweet potato or pumpkin. It is served in a doughnut form and served with a syrup made from chancaca.   • 200 gram pumpkin
  • 200 gram sweet potato
  • 4 tablespoon castor sugar
  • 2 No.s cinnamon sticks
  • 2 No.s asinseeds
  • 9 No.s Cloves
  • 20 gram yeast

How to Make Picarones Recipe

STEP 01

1 - take chopped pumpkin, sweet potatoes, asinseeds, cinnamon sticks and cloves in a pot.

STEP 02

2 - boil them for 10 minutes.

STEP 03

3 - drain them and take out sweet potatoes and pumpkin in a dish.

STEP 04

4 - put it into a food processor to make a paste.

STEP 05

5 - in a bowl mix yeast, 2 tbsp sugar and water.

STEP 06

6- mix it and keep aside for 15 minutes.

7 - add pumpkin paste,flour, salt and yeast mix in a bowl. Combine everything together.

9 - cover the bowl with a damp cloth and keep aside for an hour.

STEP 01

10 - boil all the sugar syrup ingredients in a pot. Once thickened take out the syrup.

STEP 10

12 - take your prepared dough and shape the doughnuts.

STEP 11

13 - heat some oil in a pan and fry them until they turn golden brown.

STEP 12

14 - let them cool and pour the prepared sugar syrup on top.
