A pumpkin-cinnamon dessert sweetened with flovoured sugar syrup. These Peruvian doughnuts are a typical peruvian treat and are as good as American doughnuts but are much easier to make. The principle ingredients are squash and sweet potato or pumpkin. It is served in a doughnut form and served with a syrup made from chancaca. Picarones are addictively good and not just because they are fried dough. They have an intriguing savory sweet flavor.

Ingredients for Picarones Recipe

  • 200 gram pumpkin
  • 200 gram sweet potato
  • 4 tablespoon castor sugar
  • 2 No.s cinnamon sticks
  • 2 No.s asinseeds
  • 9 No.s Cloves
  • 20 gram yeast
  • 2 tablespoon Water
  • 200 gram flour
  • 1/2 teaspoon Salt
  • As required Sugar syrup
  • 200 gram raw cane sugar
  • 1 No.s Cinnamon Stick
  • 1 No.s asinseed
  • 1 No.s pineapple peel
  • 1 No.s Orange peel
  • 200 milliliter Water
  • As required Oil

Directions: Picarones Recipe

step 1

  • STEP 1.1 - take chopped pumpkin, sweet potatoes, asinseeds, cinnamon sticks and cloves in a pot.

step 2

  • STEP 2.2 - boil them for 10 minutes.

step 3

  • STEP 3.3 - drain them and take out sweet potatoes and pumpkin in a dish.

step 4

  • STEP 4.4 - put it into a food processor to make a paste.

step 5

  • STEP 5.5 - in a bowl mix yeast, 2 tbsp sugar and water.

step 6

  • STEP 6.6- mix it and keep aside for 15 minutes.

step 7

  • STEP 1.7 - add pumpkin paste,flour, salt and yeast mix in a bowl. Combine everything together.

  • STEP 7.9 - cover the bowl with a damp cloth and keep aside for an hour.

step 10

  • STEP 1.10 - boil all the sugar syrup ingredients in a pot. Once thickened take out the syrup.

step 12

  • STEP 8.12 - take your prepared dough and shape the doughnuts.

step 13

  • STEP 9.13 - heat some oil in a pan and fry them until they turn golden brown.

step 14

  • STEP 10.14 - let them cool and pour the prepared sugar syrup on top.
