Phodnicha Bhat is a Maharashtrian version of Lemon rice prepared mostly as breakfast with previous days rice. Make it even healthier with the addition of bunch of spinach.

Ingredients for Phodnicha Bhaat recipe Recipe

  • 1 Tbsp Oil
  • 1 Tbsp Raw Peanuts
  • 1.50 Cups leftover rice
  • 1/4 Tsp Mustard seeds
  • 1/4 Tsp Cumin seeds
  • A Pinch Hing
  • 1/2 Cup Onion finely chopped
  • 5 Pieces Curry leaves
  • 1.50 Pieces slit green chillies
  • 0.13 Tsp turmeric powder
  • 1/2 Cup finely chopped spinach leaves

Directions: Phodnicha Bhaat Recipe Recipe

  • STEP 1.Heat 2 tbsp oil in a pan.
  • STEP 2.After the oil is hot, add raw peanuts and cook until peanuts get light brown color.
  • STEP 3.Once peanuts are cooked, remove them into a bowl.
  • STEP 4.In the same oil, add mustard seeds, cumin seeds, hing.
  • STEP 5.Add onions, curry leaves, green chilli, and mix.
  • STEP 6.Cook until onion turns translucent.
  • STEP 7.Add turmeric powder and mix.
  • STEP 8.Add leftover rice, salt, mix well.
  • STEP 9.Add chopped spinach leaves, mix well.
  • STEP 10.Cover and cook for 4 to 5 minutes or until spinach leaves wilt down.
  • STEP 11.Garnish with fried peanuts and coriander leaves!
