Ingredients for Phirni Recipe

  • 2 Tbsp Basmati rice
  • 1 Cup Sugar
  • 1 Litre Whole Milk
  • As required Dry fruits and nuts of your choice
  • 1 Tsp Cardamom powder
  • 1 Tsp drop Rose Water

Directions: Phirni Recipe

For Cooking

  • STEP 1.Grind the basmati rice to a coarse powder not very fine but not with large particles either. It should be in consistency of rawa/suji
  • STEP 2.Boil the whole milk in a thick bottomed vessel on a simmering flame till the milk is half its original quantity.
  • STEP 3.During the milk boiling process(before it reaches half) add the rice and sugar and keep stirring as to ensure it does not stick to the bottom or get burnt.
  • STEP 4.Once done, (reached half its original quantity) the milk will become thick almost like a creamy gravy consistency.
  • STEP 5.Turn off the heat and add cardommom powder, rose syrup and mix well.
  • STEP 6.Let it cool for sometime. Once it reaches room temperature. Pour in small earthen cups or freeze proof bowls. Garnish with nuts on top and freeze for minimum 3-4 hours or overnight.
  • STEP 7.Serve chilled.
