  • 1 No.s Large red onion, very thinly sliced
  • 600 gram sea bass fillet skinned and trimmed
  • 1 cup Amarillo Chilli Tiger’s Milk
  • sprig A few coriander
  • 1 No.s sweet potato, cooked and cut into small cubes
  • As required Fine sea salt
  • 1 inch Ginger
  • 3 No.s cloves of garlic
  • 2 No.s Lemons

step 1

  • STEP 1. squeeze the lime in a bowl and add ginger, garlic, coriander stems, chilli paste,salt and tiger’s milk.

step 2

  • STEP 1.mix everything together.

step 3

  • STEP 1.take the chopped fish, season it with some salt and add corn, sweet potato, chopped onion,milk mix, chilli and coriander.

step 4

  • STEP 1. plate it and serve.
