Cooking Directions

  • STEP 1.Cook the rice until it is soft and fluffy.
  • STEP 2.In a pan, roast the peanuts until they turn golden brown.
  • STEP 3.In a mixing bowl, whisk the yogurt until smooth.
  • STEP 4.Add the cooked rice, roasted peanuts, salt, and a pinch of turmeric to the yogurt and mix well.
  • STEP 5.Heat a little oil in a pan and add mustard seeds, curry leaves, and dried red chilies. Once the mustard seeds start to splutter, pour this tempering over the rice mixture and mix well.
  • STEP 6.Garnish with chopped coriander leaves and serve the peanut curd rice hot or chilled.
