A healthy side dish easily prepared from bitter gourd.

Set a cooking pan on the stove with medium flame.
Add 3 tbsp of coconut oil and add ¼ tsp of mustard seeds. Wait for the mustard seeds to splutter.
Add 3 dry red chilli and a sprig of curry leaves into the pan. Stir well.
Add 2 tbsp of chopped shallots, ¼ tsp of turmeric powder and saute well. Into the pan add 2 medium size bitter gourds thinly sliced. Mix well with other ingredients.
Add 3 green chillies split in half and 3 sliced onions. Cook in a low flame for 8-10 minutes. Stir in between.
6 add a pinch of salt and 2 cup of grated coconut.stir well and cook covered with the lid for 5-6 minutes on low flame.
When the colour turns to a pale brown turn off the flame.
