STEP 2.Rinse, peel and chop the veggies cauliflower, carrot, capsicum, cabbage, potatoes.
STEP 3.Add all the above chopped veggies in a large pressure cooker. Also green peas (fresh or frozen). Pressure cook the veggies for 5 to 6 whistles or for about 12 minutes on medium heat.
STEP 4.When the pressure settles down on its own, open the cooker and check if the veggies are fork tender, softened and cooked well. Remove the veggies in a bowl let it cool down a bit and mash it with potato masher. Also save this veggies stock for later.
STEP 5.Heat a frying pan, Add butter & let it melt. Add cumin seeds & let them crackle and change their color, add chopped onions and saute it for about 5 minutes.
STEP 6.Now add Red Chilli Powder, Turmeric Powder, Salt, Kashmiri mirch powder, Garam masala & Pav bhaji masala and mix very well.Add mashed veggies and mix well. Also add water from the pressure cooker in which the veggies were cooked, mix thoroughly and season with salt or spices as required.Keep on stirring occasionally and let the mashed vegetable gravy simmer for 8 to 10 minutes on a low heat by covering the pan. Adjust the consistency thick or thin as required by adding water. Garnish it with handful of finely chopped coriander leaves.(3) Toast Pav -
STEP 7.Till the time bhaji is on simmer you can prepare pavs.
STEP 8.Cut through the bread roll from the center so that you get two equal halves.Heat a tawa, add butter and let it melt, add pav bhaji masala and mix it well. Now place the pav on butter and toast it by gently pressing down with spatula.Toast on another side too. And serve hot with freshly chopped onion, lemon wedges and roasted papad.
