Ingredients for Patra Recipe

  • 2 No.s medium sized Arabic leaves
  • As required Oil  for cooking
  • 1 tablespoon Mustard seeds
  • 1 tablespoon Sesame Seeds
  • 1 pinch Asafoetida
  • 2 tablespoon Gram flour
  • 1 tablespoon Ginger green chilli paste
  • 1 tablespoon Chilli Powder
  • 1 tablespoon Grated jaggery
  • 1 cup Tamarind water
  • 2 tablespoon Salt
  • As required A few Coconut for garnishing
  • As required A few Coriander leaves for garnishing

Directions: Patra Recipe

  • STEP 1.Take a bowl, add gramflour, asafoetida, ginger chilli paste, chilli powder, grated jaggery,  tamarind water and salt. Mix well with water and make a smooth mixture. Keep aside.
  • STEP 1. Take the arabic leaf and keep it on a dry surface, remove the thick stem on top using your knife.
  • STEP 2.Using a wet muslim cloth clean the arabic leaves. Place an arabic leaf and spread a little bit of gram flour on it evenly.
  • STEP 3.Fold leaves from both sides. Roll it tightly from end to end and other and keep a little gram flour mixture. Finally seal the other end using flour.
  • STEP 4.Place the rolls on a steamer and cook for 20-25 minutes or until they set firm. Set aside for 2 minutes
  • STEP 5.Once cooled cut them into slices and keep aside.
  • STEP 6.Heat some oil again add mustard seeds,  see them crackle add sesame seeds, asafoetida and fry for a few seconds. Add patra pieces,  toss gently and cook on medium flame.
  • STEP 7.Garnish with coconut and coriander
