Patishapta pitha, for those untouched by the phenomenon, is a Bengali crepe or pancake. The concept of pithe is quite common in the eastern parts of the country like Odisha and West Bengal as well as former East Bengal, i.e. Bangladesh. Pithe can refer to anything ranging from pancakes, crepes to fritters. Patishapta Pitha is a classic Bengali dish which is made from kheer and coconut. The soft rolls are delicate and delicious. Patishapta Pitha is quite popular during Poush Sankranti or Makar Sankranti in Bengali households. This special dessert is made with rice flour and stuffed with coconut and khoya, with jaggery added for sweetness. This dish is a traditional bengali pancake recipe. It is a quick and easy indian dessert recipe.

Ingredients for Patishapta Pitha Recipe

  • 1 cup Maida
  • 1/2 cup Suji
  • 2 tablespoon Rice Flour
  • 2 tablespoon Sugar – + 0.5 Cup
  • 500 milliliter Milk – + 1 Cup
  • 1/2 cup Grated Coconut
  • 1 cup Khoya Kheer
  • 2 tablespoon Ghee
  • As required Salt
  • As required Oil

Steps To Prepare

  • STEP 1.Keep the most essential ingredients like khoya and kheer ready.
  • STEP 2.Grate the coconut beforehand to fasten the process.

Cooking Directions

  • STEP 1.Condense the milk by constantly boiling and stirring. Add khoya, kheer and grated coconut along with 50 grams of sugar to make it easier to turn the same into semi liquid state. Note - if khoya is not available then add more milk. It will take a lot of time to change to a semi-liquid state.
  • STEP 2.Add water (about 2 -2½ cups) gradually in maida and suji to make a thick mix. Add 200 grams of sugar.
  • STEP 3.Heat the frying pan and coat the surface of the pan with little oil. Apply oil with a piece of eggplant or bottle gourd or a piece of cotton.
  • STEP 4.Pour the suji-maida mix (about 5 tablespoon) on the hot pan and spread the mix on the pan till it takes a circular shape.
  • STEP 5.Put about 1 tablespoon of the semi liquid kheer on the over the spread.
  • STEP 6.Roll the spread like bread roll after 15-20 sec. Keep the roll on the pan and flip sides every 5-10 secs till it turns brownish.
  • STEP 7.Finally, take it off the pan and serve.

Storage And Serving Method

  • STEP 1.Garnish with chopped cashews and serve it hot or cold. Pair it with a cup of tea or coffee.
