STEP 1.Peel the potatoes and cut them into 1 inch cubes and put them in cold water to get rid of the starch.
STEP 2.Heat some water and season it with salt, 1 tsp chilli powder, 1 tsp cumin powder and 1 or 2 crushed garlic cloves.
STEP 3.Once it comes to a boil, add the potatoes to it and let it simmer until the potatoes are tender, but not fully cooked ( tip of the knife should easily insert into the centre of the potato cube, but it shouldn't get mashed)
STEP 4.Drain the potatoes and spread them on the baking sheet to cool completely.
STEP 5.Heat some oil to 180°C ( 350 F) and fry the potatoes, stirring frequently until golden brown. Drain them on paper towels and let them cool slightly.
STEP 6.Toss the warm potatoes in a spice blend of ½ tsp chilli powder, ½ tsp cumin powder, ½ tsp pepper, some oregano and salt as required.
STEP 7.To make the spicy sauce, saute garlic, chilli flakes in some olive oil and add the tomatoes . Cook till it softens. Add oregano and spring onion to it.
STEP 8.Let this cool and blend it to a smooth paste. Cook the sauce till it thickens
STEP 9.To make the garlic aioli , whisk mayonnaise along with olive oil and lemon juice.
STEP 10.Add minced garlic to this and give it a good mix. Check the seasoning and add more if required
STEP 11.Spread the potatoes on a plate and drizzle the sauces on top, and garnish with spring onions.
STEP 12.Serve hot
