Papas Con Rajas Recipe

A mexican recipe of potatoes with spices. This is an extremely popular vegetarian guisado and one of the favorites: it’s a combination of roasted poblano chiles, cubed boiled potatoes, onions, and crema, cooked into a savory concoction that can be used all in sorts of ways. It’s meatless but very hearty, thanks to the potatoes and crema. For a saucier guisado, rajas con crema, omit the potatoes. In that case, you double the amount of roasted poblanos.

  • 4 potatoes peeled and cubed
  • As required Water
  • 2 tablespoon olive oil
  • 1/4 onion diced
  • 4 poblano pepper roasted skin removed, stem removed, seeded, and sliced
  • As required Salt
  • 1 cup shredded cheese

Directions: Papas Con Rajas Recipe

step 1

  • STEP 1.Add potatoes and water to pot and boil them. Set aside after boiling. In a skillet heat some olive oil. Add onion and cook for 1 minute. Add poblano peppers and cook for 3 minutes.

step 2

  • STEP 1.Add the cooked potatoes and cook for 1 minute. Add salt and cheese and mix well. Serve with tortillas.
