A bengali recipe of mixed vegetable with spinach. What can complement the Khichuri lunch of wintery afternoon best. This recipe is a crispy Beguni and Palong Shaker Ghonto a.k.a Niramish Ghonto especially whenever you crave for no onion no garlic platter. Obviously, there are other dishes but none like this. Palong Shaker Ghonto is basically a Vegetarian dish prepared with various veggies that include Eggplant, Radish, Potato and obviously Spinach plays the lead role. In Bengali, Ghonto stands for a semi massed mixed-Veg and it is mostly tempered with Bengali five spices which are known as Panch Phoron.

Ingredients for Palong Shak Ghonto Recipe

  • 300 gram Spinach
  • 60 gram Potato cubes
  • 60 gram Sweet potato cubes
  • 150 gram Pumpkin cubes
  • 150 gram Brinjal
  • 80 gram Radish
  • 60 gram Broad beans
  • 10 piece Bori
  • 1 piece Green chili
  • 15 gram Coriander leaves
  • 2 piece Dried red chilies
  • 2 piece Bay leaves
  • 1/4 teaspoon Nigella seed
  • 2 gram Turmeric
  • 1/2 teaspoon Cumin powder
  • 7 gram Salt
  • 15 gram Sugar
  • As required Mustard oil

Directions: Palong Shak Ghonto Recipe

step 1

  • STEP 1.Soak and wash off the spinach. Steam the spinach and stalks with salt. Heat a pan with mustard oil and fry bori, then fry brinjals and temper them with red chillies and bay leaves. Add nigella seeds, potatoes, pumpkins, radish, beans and fry for 3 minutes.

step 2

  • STEP 1.Add turmeric, cumin and salt. Cover and cook. Add spinach, sugar, fried brinjals, bori, chopped coriander, green chillies and cook. Serve with rice.
