The Nigerian native Jollof Rice is also known as Iwuk Edesi or Palm oil Rice is a soul food at it's finest and is a luscious rice prepared in palm oil along with kpomo,shrimps,ugu leaves,peppers and other seasoning ingredients.

Ingredients for Palm Oil Rice Recipe

  • 3 cup Rice
  • 2 tablespoon ground crayfish
  • As required kpomo
  • As required Shrimps
  • 4 Nos tomatoes
  • 3 Nos bell peppers
  • 2 Nos scotch bonnet peppers
  • 1/2 Nos diced red bell pepper
  • 1/4 teaspoon cameroon pepper
  • 1/2 cup palm oil
  • As required handful ugu leaf
  • 1 Nos onion
  • 1 teaspoon Salt
  • 2 Nos maggi cubes
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • 2 cup Water

Directions: Palm Oil Rice Recipe

  • STEP 1.Blend tomatoes and peppers together

    • STEP 2.1. In a cooking pot add palm oil and heat it.

    step 4

    • STEP 3.2. Add in chopped onions and saute.

    step 5

    • STEP 4.3. Add bend paste,stir and cook for 10 mins with the lid on.

    step 6

    • STEP 5.4. Now add diced pnomo,shrimps followed by ground crayfish.

    • STEP 6.5. Add in salt,maggi cubes,cameroon pepper,garlic powder & ginger powder

    step 8

    • STEP 7.6. Add 2 cups of water and stir it well.

    • STEP 8.7. Then add the parboiled rice and cover the pot with a aluminium foil

    step 10

    • STEP 9.8. Then cover it up with a lid and cook it for 20 mins

    step 11

    • STEP 10.9. Lastly add the ugu leaves,red bell peppers and cover it.

    step 12

    • STEP 11.10. Let it cook for 5 mins on a low heat .

    step 13

    • STEP 12.11. After 5 mins turn off the flame and serve.
