Cooking Directions

  • STEP 1.Preheat the oven to 400°F (200°C).
  • STEP 2.Place the tomatillos, jalapenos, onions, and garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  • STEP 3.Roast in the oven for 15-20 minutes until the vegetables are soft and slightly charred.
  • STEP 4.In a large pot, heat olive oil over medium heat. Add the chicken and cook until browned on all sides.
  • STEP 5.Remove the chicken from the pot and set aside.
  • STEP 6.In the same pot, add the roasted vegetables, chicken broth, cumin, oregano, and cilantro. Bring to a simmer.
