There are plenty of tea-time snacks from Kerala that may not be as popular as the iconic banana chips, but in terms of flavour they are inferior to none. One of the most beloved snacks of Kerala is pakkavada, because of its unique shape they are also called ribbon pakoda. To make this snack, thin strips of rice flour-based dough are deep-fried in oil, until they are reddish or golden brown. The snack is so popular that they are also sold commercially, just like banana chips and Murukku.   The dough of this ribbon vada or pakoda, is made with gram flour rice flour, red chilli powder, fennel powder, asafoetida or hing, and salt. All of these are mixed together with ghee and water to make a smooth dough and then run through a Murukku machine. An incredibly easy snack that can be served with tea or as a side dish to main meals.

Ingredients for Pakkavada Recipe

  • 0.33 cup Gram flour
  • 0.33 cup Rice flour
  • As required Salt
  • 0.33 teaspoon Kashmiri Chilli powder
  • 0.17 teaspoon Pepper powder
  • 0.08 teaspoon Fennel powder
  • 0.08 teaspoon Asafoetida powder
  • 0.17 cup Water
  • As required Oil for cooking
  • 0.33 Curry leaves stem

Cooking Directions

  • STEP 1.To a bowl add gram flour, rice flour, Kashmiri chili powder, pepper, fennel powder, asafoetida, and a pinch of salt to taste.
  • STEP 2.Gently pour in water by mixing the ingredients to form a dough.
  • STEP 3.Grease the interiors of the pakkavada maker with ghee so that dough won’t stick.
  • STEP 4.Fill in the dough into the pakkavada maker
  • STEP 5.Set up a pan. Add oil for frying. Frying would take place on medium flame.
  • STEP 6.Gently turn the lever of the pakkavada maker so that the dough falls directly into the frying pan.
  • STEP 7.Toss theme on both sides, until they are golden brown. Take them out in a pan.
  • STEP 8.In the same pan fry a branch of curry leaves and garnish the crispy hot pakkavada.

Storage And Serving Directions

  • STEP 1.Serve with hot cup of tea.
