Stir-fried water morning glory is one of Thailands most popular vegetable side dishes, its rarely seen at Thai restaurants outside Asia, as Pak Boong is hard to find.This simple yet delicious stir fried vegetable side dish made with Pak Boong (ผักบุ้ง; Water Morning Glory; Water Spinach) is one of Thailand's most popular foods. We think it should be on every first-time visitor's "must eat" list, as it is difficult to find at restaurants in the west. Seasoned with soy bean paste, garlic, chilies, soy sauce, and oyster sauce, the salty-spicy-sour-and-crunchiness of Pad Pak Boong Fai Daeng is great as a side dish or all by itself.

Ingredients for Pak Boong Recipe

  • bunch Big morning glory
  • 3-4 large garlic cloves
  • 3-4 Thai hot chilies
  • 1/2 tablespoon yellow bean paste
  • 1/2 tablespoon light soy sauce
  • 1/2 tablespoon oyster sauce
  • 1 tablespoon vegetable oil

Directions: Pak Boong Recipe

step 1

  • STEP 1.Cut the ends of the morning glory and then clean them, then cut it into 4 inch long pieces, leaving the top section and leaves a little longer.

  • STEP 2.In a mortar and pestle crush 3-4 large cloves of garlic (removing the shells). Take it out in a bowl. And now add the thai hot chilies and lightly crush it until they are broken a little.

  • STEP 3.Put all the sauces, chilies, and garlic in the bowl, on top of the morning glory.

  • STEP 4.Heat the oil in a deep frying pan, heat it.

step 5

  • STEP 5.Dump the bowl of ingredients into the pan, so that the sauces are on the bottom.

  • STEP 6.Quickly stir it up so that it cooks evenly. Fry then for 2-3 mins and keep stirring.

  • STEP 7.Add water as needed if it looks a little dry (there should be a thin-watery sauce in the pan).

  • STEP 8.It will take a min or so to cook, be careful, and don’t leave it on the heat for too long.

  • STEP 9.When leaves start getting wilted but the stalks are still stiff, you’ll know our dish is done. Stir it for another few minutes and remove it from the heat and serve.
