STEP 1.Heat cooking oil in a pan. Add ½ tsp of mustard seeds.

STEP 1.When the mustard seeds splutter add in ¾ cup of chopped onion and 2 chopped green chillies. Saute well.

STEP 1.When the onion becomes tender add in 1 ½ cup of chopped snake gourd.

STEP 1.Add ¼ tsp of turmeric powder and ¾ cup of grated coconut. Cook with a lid on for 3-4 minutes on medium flame

STEP 1.Move the ingredients to the corner of the pan and to the center crack 2 eggs.

STEP 1.Add to the egg a pinch of salt and curry leaves. Mix all the ingredients together.

STEP 1.Continue stir cooking till the eggs are properly cooked. The recipe is ready.
