This dish is authentic Gujarati Snack Item which is prepared mostly during monsoon. Tender COLOCACIA leaves are chosen for best taste and texture. A spicy, sweet and tangy batter of mixed flours is applied on the posterior side of the leaves and are rolled up.. These rolls are then steamed.. A flavourful tempering of mustard, white sesame seeds and asafoetida is poured over the steamed rolls. A dash of shredded coconut is also added for the enhanced flavour.. #monsoon

Ingredients for Paatra Recipe

  • 4 Pieces big colocasia leaf( patra na paan)
  • 1/4 cup Gram flour
  • 1 tbsp jovar flour
  • 1 tbsp Fine semolina
  • 1/2 tbsp Jaggery
  • 1/2 Pieces Juice of
  • 1/2 tsp Red chilli powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Garam masala
  • 1 tbsp Sesame seeds
  • 1 tbsp green chillies ginger garlic paste
  • 0.06 tsp Baking soda
  • 1 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 0.13 tsp Asafoetida
  • 1 tsp Shredded coconut
  • 1.50 tbsp Coriander

Directions: Paatra Recipe

  • STEP 1.Take COLOCACIA leaves. Remove thick veins from posterior side.
  • STEP 2.Wash properly.
  • STEP 3.Take a bowl. Add all flour and masalas mentioned above. Mix properly. Add little water at a time and prepare thick batter.
  • STEP 4.Wash COLOCACIA leaves properly.
  • STEP 5.Apply prepared batter on posterior side and roll as shown in images to get proper rolls.
  • STEP 6.Prepare a steamer.
  • STEP 7.Steam the rolls.
  • STEP 8.Heat up a pan. Add oil. Add mustard and sesame seeds. Put asafoetida too. Pour this tempering over steamed COLOCACIA leaves. Garnish with coriander and shredded coconut. Serve with hot tea.
