Cooking Directions

  • STEP 1.Soak raw rice in water for 4-5 hours, then grind it into a smooth batter.
  • STEP 2.Add coconut milk, salt, and a pinch of sugar to the batter and mix well.
  • STEP 3.Allow the batter to ferment overnight or for at least 8 hours.
  • STEP 4.Heat an appachatti or non-stick pan and grease it with oil or ghee.
  • STEP 5.Pour a ladleful of batter into the center of the pan and swirl it around to spread evenly.
  • STEP 6.Cover the pan and cook on low heat until the edges turn golden brown and the center is cooked.
  • STEP 7.Serve hot with your choice of curry or chutney.

Cooking Tips

  • Make sure the batter is not too thick or too thin. It should have a pouring consistency.
  • If you don't have an appachatti, you can use a regular non-stick pan or a pancake griddle.
  • To achieve the traditional shape, rotate the pan while pouring the batter to create a thin edge and a thicker center.
