  • 0.33 cup Broken rice
  • 0.67 cup Coconut milk third extraction
  • 0.67 cup Coconut milk second extraction
  • 0.33 cup Coconut milk first extraction
  • 0.33 Tsp Salt

Steps To Prepare

  • STEP 1.Rinse the rice well under running water and set it aside.

Cooking Directions

  • STEP 1.In a pressure cooker, add the rinsed broken rice along with the third extraction of coconut milk.
  • STEP 2.Cover the pressure cooker with a lid and cook till three whistles.
  • STEP 3.Once the rice is cooked, add the second extraction of coconut milk to it and let it boil.
  • STEP 4.Finally, add the first extraction of coconut milk along with salt and turn the flame off.

Pro-Tip

  • STEP 1.You can add a pinch of cumin powder and freshly grated coconut to the kanji to enhance the flavour.

Storage And Serving Method

  • STEP 1.Scoop the kanji into a bowl and serve hot with some chamanthi, cherupayar thoran or papadam and relish.
