Ingredients for Oxtail Stew Recipe

  • 4 pound Oxtail
  • 1 teaspoon Thyme
  • As required Salt To Taste
  • 4 tablespoon Oil
  • 2 teaspoon Curry powder
  • 2 teaspoon seasoning powder
  • 3 Nos Green Onions
  • 1 cup baby Carrot
  • 1/2 pound Potato
  • 6 cup beef stock
  • 4 tablespoon Tomato paste
  • 2 Nos Diced Tomatoes
  • 1 Nos Red bell pepper
  • 1 Nos Large Onion
  • 1 Nos Chopped Scotch Bonnet
  • 3 Cloves Garlic
  • As required Dry Pepper
  • 2 Nos Bay Leaves
  • 1 teaspoon Paprika
  • As required Water

Directions: Oxtail Stew Recipe

step 1

  • STEP 1.Wash and clean oxtail and in a bowl add oxtail and season with thyme,paprika,curry powder and seasoning powder

  • STEP 1.Add in minced habanero pepper, minced garlic, salt and olive oil. Now mix the oxtail evenly with the ingredients.

  • STEP 1.Cover it with a transparent plastic and keep it in the fridge for 20 mins

  • STEP 1.Add oil in a pot & heat it and add chopped onions and saute it until translucent. To this add bay leaves and cook for 30 seconds.

  • STEP 1.Now place the oxtail into the pan and cook each side for 10 minutes and then add tomato paste,cayenne pepper,chopped tomatoes,onions and bell pepper.

  • STEP 1.Add beef stock,cover and cook for 20 minutes and add carrots,potatoes and cook until they becomes soft. Add green onions and cook it at low flame for 5 minutes.

  • STEP 2.9. Turn off the flame and serve it with white rice
