Everyone loves to linger over an indulgent breakfast or mid-morning brunch on the weekends. Busy weekday mornings, however, are another story. With everyone in a hurry to get to where they need to be, a healthy, breakfast is often nothing more than a pre-packaged granola bar or a quick piece of toast. You may not have time for baking breakfast casseroles or whipping up a batch of buttermilk biscuits but, thanks to a few ingredients and your convenient blender, you can still make a healthy and tasty grab-and-go breakfast. Smoothies are no longer thought of as simply an after-exercise pick-me-up. This colorful orange-carrot smoothie checks off all the boxes it is quick and easy, tangy, sweet, and refreshing. The bright notes of both the orange and mango come through strong and blend well with the sweet vegetal taste of the carrots, which add some healthy vitamin-a packed bulk and color. You already know how good carrots are when baked into a moist carrot cake, so why not add one to a smoothie? To keep your prep time down to just five minutes, you can use a pre-cut bag of matchstick carrots (this size blends quickly) available in the produce section of your grocery store. We prefer using the frozen mango chunks to keep this smoothie extra cold, but feel free to use a fresh mango, whole milk yogurt works best in this recipe, as low fat or nonfat yogurt gets chalky in the blender. In the time it takes to brew a cup of coffee, you can make this smoothie. Simply combine the carrots, mango, yogurt, orange juice, ice cubes, and a dollop of honey in your blender. Process a few seconds, and you are ready to go.
