Rice sauteed with onions and then steamed, subtly flavoured with lemon juice and cardamom. This Chicken and rice dish came into our times basically from China. Chicken with cramelized with cardamom and onion, also famous in Jerusalem. a delicious one-pot meal from the Great Yottam Ottolenghi. All it needs is a well filled skillet with olive oil, onions and few basic spices.

Ingredients for Onion And Cardamom Rice Recipe

  • 500 gram Rice
  • 8 Green cardamom lightly crushed pods
  • 100 gram Onion Finely Chopped
  • 1 tablespoon Lemon juice
  • As required Salt
  • 2 tablespoon Oil

Directions: Onion And Cardamom Rice Recipe

step 1

  • STEP 1.Wash and rinse 500 gm rice repeatedly till the water runs clear.

step 2

  • STEP 1.In a saucepan heat 2 tbsp oil and add 100 gm finely chopped onion and 8 lightly crushed green cardamom pods.

step 3

  • STEP 1.Fry on medium heat till the onion softens.

step 4

  • STEP 1.Add 500 gm washed rice and stir. Fry for 2 minutes.

step 6

  • STEP 1.Then add 1 ½ ltr cold water, 1 tbsp lemon juice and salt to taste.

step 7

  • STEP 1.Bring to a boil and allow the rice to boil for 5 minutes. Stir occasionally.

step 8

  • STEP 1.Then drain the rice and transfer it to a steamer. Spread it out evenly.

step 9

  • STEP 1.Steam for 20 minutes till the rice is cooked. Take off the steam and serve.
