Popular Kerala sadya dish. Olan is a delicious curry Made with white pumpkin (ash gourd or kumbalanga), cowpeas (red lobia or chawli) and coconut milk. Gluten-free and vegan. Olan is a dish that is part of the Kerala cuisine of the state of Kerala in South India. It is a light and subtle-flavored dish prepared from white gourd or ash-gourd, and black-eyed peas, coconut milk and ginger seasoned with coconut oil. It is usually served as part of a Sadhya.

Ingredients for Olan Recipe

  • 1/4 cup Diced winter melon
  • 0.13 cup Black eyed beans
  • 3/4 No.s Green chilly slitted
  • 1/4 cup Thick coconut milk
  • 1/4 sprig Curry leaves
  • 1/4 teaspoon Coconut oil
  • As required Salt

Preparation Directions

  • STEP 1.Wash and clean black eyed beans. Soak in water for 30 minutes. Boil in a pressure cooker till 1 whistle. Keep aside.

Cooking Directions

  • STEP 1.For preparing olan take an earthen pot.
  • STEP 2.Add in 1 cup of diced winter melon, green chillies, pinch of salt and ½ cup of water.
  • STEP 3.Cook with a closed lid on for 5-7 minutes on medium flame.
  • STEP 4.Now add the boiled beans to the pot and mix well. Allow the mix to come to boil.
  • STEP 5.Pour in 1 cup of thick coconut milk. Turn down the flame to low heat and cook for around 5 minutes.
  • STEP 6.When the mix starts boiling, turn off the flame. Add a few curry leaves and drizzle 1 tsp of coconut oil
  • STEP 7.Keep closed for another 5 mins. Olan is ready to be served.
