  • 1/2 teaspoon Ginger Garlic Paste
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • 1/2 teaspoon Coriander Powder
  • 1/2 tablespoon Tamarind Pulp
  • As required Salt To Taste
  • 1/2 teaspoon Jaggery
  • as needed Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Wash and cut the brinjals into small pieces.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions and saut茅 until golden brown.
  • STEP 4.Add ginger-garlic paste, turmeric powder, red chili powder, and coriander powder. Mix well.
  • STEP 5.Add the brinjal pieces and cook until they are soft and tender.
  • STEP 6.Add tamarind pulp, salt, and jaggery. Mix well and cook for a few more minutes.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice or roti.
