A mexican recipe of corn husk filled with masa and chilli beans. Northern Style Bean Tamales are perfect for vegetarians, vegans, and meat-eaters alike. Delicious, savory, and so yummy. It’s kinda hard to find masa without lard. You can use organic shortening suitable for vegans. If you buy the masa already prepared from the store, chances are it will not be vegan. Can be served with ancho beans or serve them with chips as a dip. So yummy.

Ingredients for Northern Style Bean Tamales Recipe

  • 36 corn husks
  • 4 ancho chilies stems removed, seeded, deveined
  • As required Water
  • 2 garlic cloves
  • 1 teaspoon ground cumin
  • 1 pound Refried Beans
  • 2 tablespoon Oil
  • As required Salt
  • 1 pound prepared masa

step 1

  • STEP 1.Sort the husk and remove the debris. Soak the husk in warm water. Set aside. For ancho sauce take water in a pot and add ancho chillies and boil.

  • STEP 1.Add the chilies in a blender with garlic, cumin and salt and the water from the boiled chilies. Blend in paste. Reserve 3 tbsp. Heat some oil and add cooked beans, ancho sauce and salt. Cook in thick paste.

step 3

  • STEP 1.For the masa add 3 tbsp of the reserved ancho sauce and set aside. Assemble tamales by adding a thin layer of masa to corn husk. add 1 tbsp of beans and repeat for all. Fold the sides. Heat a pan and add husk on the bottom and add water. Cook for 1 hour and serve.
